This book contains a short introduction with a discussion of salad dressings, beans, and suggestions on how to use the book. Then, 32 recipes are provided with full-color photos for vegan Italian salads that always have been and always will be vegan. No meat or dairy substitutions or omissions are required to make these delicious salads (they are vegan by their nature, not through modification). The recipes are divided into three main sections with varying levels of difficulty, but none of the salads are particularly hard to make. Some of the included salads are panzanella (bread and tomato salad), patate prezzemolate (Italian potato salad), insalata alla polentona (fried polenta salad), insalata dolce d'arancia (sweet orange salad), insalata di fagiolini alla Calabrese (Calabrian green bean salad), insalata di ceci (chickpea salad), insalata alla palermitana (Palermo salad), insalata pantesca (potato and tomato salad), insalata di lenticchie e arance (lentil and orange salad), insalata di finocchio e castagne (fennel and chestnut salad), and 22 more. There are also three bonus salads that don't quite meet the criteria for inclusion (for example Caesar salad which is not of Italian origin) but are too good to exclude based on technicalities.
