Biscotti Cookies, also known as cantucci, are Italian almond biscuits that originated in the Tuscan city of Prato. They are twice-baked, oblong-shaped, dry, crunchy, and may be dipped in a drink, traditionally Vin Santo, which is an Italian dessert wine.

Biscotti cookies date back to medieval Italy. The word translates to “twice cooked or baked,” and it is believed that they were twice-baked to dry it as a way to preserve it, especially for long journeys and in times of war.

Today, biscotti are popular cookies served with coffee in cafés and coffee houses as they are perfect for dunking and maintain their shape. Popular flavors include the traditional almond, but also lemon, vanilla or chocolate. Nuts and dried fruits are sometimes mixed in to the batter. Biscotti are sometime dipped and coated in chocolate or a sweet glaze.
