A poke cake is a cake that is first baked, then poked full of holes. After poking the freshly baked cake full of holes, the baker pours something sweet, syrupy or creamy over top to run down into the holes. Whatever is poured over top is often a contrasting or colorful color to the cake so that, when the cake is sliced, it creates a vibrant presentation.

There are many varieties of poke cakes from chocolate, to Jell-O to cream and shortcake. Fruit, sprinkles and candies are sometimes used to decorate the tops of the cakes.

Poke cakes popped up in America around 1970, first appearing in a print advertisement intended to increase Jell-O sales. The ad illustrated the quick and clever way to make a poke cake by combining cake mix, Jell-O and Cool Whip in order to create an attractive, fun and modern dessert.

Poke cakes are very popular during the summer season because of there ability to create patriotic colors of red, white and blue for holidays such as Memorial Day and Independence Day.
