The Northern Pacific Railway started serving baked Idaho potatoes to diners in 1908, with a selection of fillings and topping to make them more interesting and exciting.

In earlier kitchens, baking potatoes were a convenience. They did they not require any water to cook and overcooking them did little to detract from the taste or texture of the interior flesh. With most homes having fires going mostly non-stop, baking potatoes was a simple matter of throwing something on the stove.

Potatoes are a very good staple and base for a variety of toppings. A baked potato makes a convenient pocket to stuff, mix or sprinkle a variety of ingredients to create endless varieties. This includes, onions, sour cream, cheese, butter, bacon or spices.
