Rachel’s famous potato recipe: It’s important to use yellow or gold potatoes - smaller is better but any yellow potato is fine. First, preheat oven to 425F.

1) quarter the potatoes and then halve the quarters if they are on the bigger side / you want largish bite sized pieces

2) put them in a pot of water and add a good amount kosher salt

3) boil, stirring here and there, till tender but not falling apart - 5-10 min depending on size

4) drain then put back in pot - let them dry out a few minutes and then shake them around in the pot - you don’t want them wet for the next step

5) put potatoes on a sheet pan and coat very well with avocado or grapeseed oil and kosher salt - don’t skimp on either!

6) roast for 10 min then flip potatoes around so crispy bottoms are on top

7) roast till desired amount of golden crispiness - Usually another 10 minutes

8) serve, splashed with a bit of sea salt and pepper, and amaze your friends and family!
